The Siberian sturgeon (Acipenser baerii) is a species of sturgeon in the family Acipenseridae. It is found throughout the major Siberian river basins flowing north into the Kara Sea, Laptev Sea and East Siberian Sea.
It takes an average of 6 to 8 years to harvest the precious black eggs. The Siberian sturgeon is a small species reaching a weight of 8 to 40 kg.
Caviar from this breed has a distinct flavour, the caviar is recognised for its pure, elegant taste and its delicate length, both smooth and transparent. The diameter of the eggs ranges from 2.2 to 2.7 mm depending on age, with tones ranging from grey to amber.
